Coconut Flour Keto Cookie Bars

Yield 6 Cookie Bars
Ingredients:
- 1/2 cup coconut almond butter
- 2 pasture-raised eggs
- 1/2 cup of grass-fed butter
- 1/3 cup of monk fruit
- 1 tsp of vanilla extract
- 1/4 cup of coconut flour
- 1 tsp of baking powder
- 1/2 cup of Lily’s chocolate chips
Instructions:
Step #1: Preheat oven to 350.
Step #2: Blend softened butter and nut butter until smooth.
Step #3: Add sweetener, eggs, and vanilla and blend until combined.
Step #4: Add the coconut flour and baking powder and blend until the ingredients are well mixed.
Step #5: Add the chocolate chips and stir through.
Step #6: Pour the mixture into a lined square pan, 8 inch will work.
Step #7: Place in the oven for 20 minutes

Keto Cookie Special Notes
Feel free to use whatever nut butter you like best. I personally like the coconut-almond butter which tastes great and is a combination of coconut butter for healthy fats and almond butter. You can use whatever natural sweetener you like, but to keep it keto you will need to stick with monk fruit, erythritol, xylitol or stevia.

You can also add a few drops of stevia on top of the sweetener if you really want a sweet treat. For this recipe, a loaf pan was used, but feel free to double this recipe if you would like to make a big bath in an 8×8″ pan.

Would using liquid stevia in place of the other sweetener have a major effect on the outcome of this recipe? If not would I just sweeten batter to taste ?

Not really an answer doc. Will the stevia alter the recipe? Could a monk fruit without erythritol be used in place of the monk fruit in your affiliate link? It can get REALLY pricey to experiment with tweeking another persons recipes, as you well know. TIA for your full and considered response.

These worked out well. We sprayed muffin tins well and put a heaping tablespoon into each one and cut the baking time to 10 minutes and it worked like a charm. It made 15.

Has anyone tried a replacement for the butter? Coconut oil? I love butter- butter doesn’t like me.
There is no coconut butter in this recipe. “Coconut Almond butter” only contains almonds, palm oil and natural flavor. No coconut butter.
