Yield 8–12 Slices

Instructions:

Step #1:  Preheat the oven to 350°F. Grease two 3 by 5-inch mini loaf pans with coconut oil cooking spray.

Step #2:  Place all of the ingredients in a food processor or high-powered blender and process until smooth. Divide the batter equally between the loaf pans.

Step #3:  Bake for 25 minutes. Insert a toothpick in the center of each loaf; if it comes out clean, the bread is fully baked. Remove from the oven.  If the toothpick is not clean, it is not finished so check it every 5 minutes.

Step #4:  Serve or store in an airtight container in the refrigerator for up to a week.

Keto Bread Notes

  • For the best results, try using two 3 inch x 5 inch mini loaf pans as opposed to 1 regular loaf pan.  The overall moisture and flavor is really good using 2.
  • You can use any nut butter you would like (cashew, sunflower, etc.), just make sure it is creamy.
  • I love to use stevia or monk fruit…but if you aren’t trying to go low-carb you can use honey or maple syrup.
  • This bread is great topped with grass-fed butter, ghee or coconut oil and a sprinkle of cinnamon!

Bread is a modern-day comfort food but also one of the most inflammatory foods you can consume.   This is due to the high carbohydrate content that alters our blood sugar and stimulates inflammatory mechanisms.  This is a fantastic, grain-free, low-carb, ketogenic bread recipe that is easy to make and your family will love will the texture and flavor!

We have gotten rave reviews about our coconut flour bread and almond flour bread recipes but we also had some people asking about a flour-free recipe.  So we decided to try this out and it worked great.

I love using the MaraNatha coconut almond butter which is a combination of coconut butter and almond butter.  It tastes great and you get the benefit of the medium chain fats within the coconut butter and the long-chain fats in the almond butter.  Both coconut and almond butter also provide a lot of good fiber.

The overall recipe makes a high fat count, about 80% of calories, moderate protein (about 15% of calories) and very low carbohydrate count (about 5% of calories).  This is within the ideal ratio for a ketogenic diet, making this perfect for someone trying to reduce inflammation and get into ketosis.

To add in more antioxidants, consider putting 1 tsp of ground cinnamon in the recipe or sprinkling it on top of a coconut oil or grass-fed butter spread that you put on the bread.

      1. As stated above, The ingredients on the Maranatha coconut almond butter say it has evaporated cane juice in it…this is ok for Keto? Thanks

    1. Letty, There are eggs, three of them. A friend made this for me, lightly toasted it in her toaster oven, put grass-fed butter and some apricot jam on it and we had it with cups of tea. I was very impressed with the texture and then the taste of this bread. So easy to make and containing no flour, yes, I was very impressed. I have all of the ingredients and will be making it today. Thank you to Dr. Jockers for this healthy and tasty recipe.

Almonds are a seed not a nut < double check with a doctor because like many assume almonds are not a nut its very interesting do some research just thought to share, also the cashew it is not a nut it comes from a fruit flower check that out as well , my grandson has an allergies to peanuts as well .           1. I know for best results you said to use 2 small pans but can I get away with 1 full loaf pan? if so, do I need to modify anything?

        1. Hi Anita,
          Do you know that many peanut allergies aren’t actually a reaction to the peanuts, but to a common contaminate. Sometimes referred to as dirty peanuts, they often contain several of the very potent mold mycotoxins known as aflatoxin, such as B1, B2, G1 and G2. These common food toxins can be deadly and are often quit high in peanuts. Many people that couldn’t eat peanuts have found that they have no problem when eating jungle peanuts, which are know to be devoid of those mycotoxins. Your grandson can be tested in minutes by most health care providers if provided with the two types of peanuts that haven’t been cross-contaminated. Unless his peanut reactions are very minor, I wouldn’t recommend an oral test, which could be preformed at a doctor’s visit. If he is more sensitive to these toxins, then it behooves his parents to learn about other foods before they could prove deadly to him, if not properly handled. Also, while organic foods are obviously superior in many ways, they are just as prone to contain mycotoxins.

  1. this bread is amazing, been looking for a bread recipe without granulated sweetner, i used 1/2 cup almond butter and 1/2 cup coconut butter, did 10 drops of sweet leaf vanilla creme, put it all in a 3×8 loaf pan, fantastic! thank you!

  3. Willl going on a ketogenic diet definitely reduce inflammation? And if so do you have a diet to follow? Thanks for sharing it.i have been off gluten, dairy and sugar for over 9 months now but it hasn’t helped with the pain in neck and shoulders. And the skin on the arms looks wrinkled and flabby loose muscles??thanks again for your help.

    1. There are 8 servings in total, so if you cut each loaf into 4 slices, one of those is 7 total carbs, but 3 net carbs.

      I find the thick slices too filling. I normally slice them into 8 pieces per loaf, and usually just have one slice at a time. I freeze the rest and take a slice down the night before. When I’m ready to eat it, i warm or toast it in the toaster oven. It’s the yummiest keto bread!

    Does almond butter keto bread raise blood sugar for diabetics? If so, is there any kind of bread for diabetics?

  5. I have a question about ketogenic lifestyle and using almond meal or coconut flour for recipes. Is it OK?

    1. Almond meal is okay in small amounts and coconut flour is great! Just keep track of carb content and your body’s response to each by measuring blood sugar!

  7. This bread is amazing! We live in a small town where almond flour is more expensive than a gold brick. I’ve been looking for a good keto flourless bread that is not too eggy. Somehow this works. My 7 and 10 year old say it’s the best Keto bread I’ve made and trust me, I’ve made quite a few. Even my husband (reversed his type 2 diabetes with a keto lifestyle) loves it. He says it has almost an earthy rye bread taste. The only changes I made is using 8 extra large fresh eggs and 4 tsp aluminum-free baking powder instead of the baking soda and apple cider vinegar. That’s it, just 3 ingredients. I put it in a regular-sized greased loaf pan at 300 degrees for 70 minutes. It makes a high, fluffy, delicious loaf that I cut into 16 slices. At only 3 carbs a slice, using my 3 ingredients, I can make several loaves a week for my family.
