Summer Grain-Free Pasta Salad

Yield 8 Servings
Ingredients:
2 1/2 lb. yellow squash, peeled and spiraled into noodles OR 2 jars Palmini noodles
1/2 cup green onion, sliced.
1/2 whole cucumber, quartered and sliced.
6 oz kalamata olives
1/2 cup extra virgin olive oil (for dressing)
3 Tbsp Apple cider vinegar (for dressing)
1/2 tsp garlic powder (for dressing)
1 1/2 tsp oregano, dried (for dressing)
1/8 tsp thyme (for dressing)
1/2 tsp basil, dried (for dressing)
3/4 tsp parsley (for dressing)
3/4 tsp sea salt (for dressing)
Optional Ingredients:
4 oz. of feta cheese or dairy free feta cheese.
Instructions:
Step 1: Add all of your vegetables in a large bowl.
Step 2: Add all dressing ingredients in small glass jar / blender and shake or blend to mix everything together.
Step 3: Pour dressing over veggies and toss to combine.
Step 4: Serve cold and enjoy!

Special Notes:
Perfect recipe to bring along to a summer barbecue. Low carb, Paleo friendly and super easy to make. You can add some organic chicken or grass-fed ground beef to make this a complete meal with healthy protein and fat.
Feel free to experiment with noodles, you can use gluten-free noodles, Palmini noodles, zucchini or yellow squash noodles. You can add in some organic feta cheese or dairy-free feta cheese and diced tomatoes for a more Mediterranean styled summer pasta.

This is a great recipe if you are into international food. I personally love the Palmini noodles and they are my typical go-to pasta source but I also enjoy zucchini noodles. Olives and olive oil are rich in vitamin E and polyphenols that support gut health and cardiovascular health.
This recipe is rich in Mediterranean herbs such as oregano, parsley, basil, thyme, and garlic which support your immune system and digestive health. These herbs add tremendous flavor but also help to reduce pathogens in the gut and protect you against viral and bacterial infections.
