Chocolate Avocado Truffles

Yield 10–12 Truffles

Ingredients:

Instructions:

Step #1:  Place a heat-safe glass bowl inside a medium saucepan filled with 1 inch of water over low heat. Place the chocolate in the bowl and allow to slowly melt, stirring occasionally.

Step #2:  In a separate bowl, mash the avocado. When the chocolate has fully melted, remove from the heat and transfer it to the bowl containing the mashed avocado. Stir them together, then add the stevia, vanilla extract, cinnamon, and salt. Stir until fully combined and free of clumps. Refrigerate for 30 minutes, or until cooled and hardened.

Step #3:  Scoop the mixture into 10 to 12 equal-size balls and roll them until they are smooth.

Step #4:  Place the cacao powder in a shallow bowl. Roll each ball in the cacao powder and serve immediately. Store any leftover truffles in an airtight container in the refrigerator for up to a week.

These chocolate avocado truffles are a fantastic dessert recipe that is low-carb, ketogenic and fat burning.  The combination of avocado and dark chocolate provides healthy fats, fiber and antioxidants to help the body produce good hormones that optimize your metabolism.

Stevia is our favorite natural sweetener because it is one hundred times sweeter than sugar and has no effect on blood sugar.  Adding in the cinnamon gives a unique cinnamon flavor and adds in more antioxidants that support blood sugar signaling patterns.

  1. Hi Dr Jockers I have been using stevia extract since 1985. Recently, and much to my horror, I read that stevia, while low on the glycemic index , raises
    insulin more than table sugar. Is this true?

    1. You might be using stevia with sugar alcohol or other filler like maltodextrin, maltitol, Erythritol, xylitol etc… Those products have only 1% stevia in it. Please check the label.

    1. Yes, I recommend 1 tsp of honey for 5-10 drops of stevia. If you like it real sweet than do 1 tsp for 5 drops and if you want it less sweet than do 1 tsp for 10 drops.

  3. I have (2) 1oz squares of unsweetened chocolate. Can I use this? If so, how much or do I not have enough? Recipe calls for 3/4 cup.

  4. I’m also not sure about the right amount of chocolate. Do you measure the cup with chocolate broken in pieces? grated? Or do you have the weight in grams for me? Thank you!

      To measure some clumsy unmeasurable foods, here’s a trick::
      Say u want 1/4 cup chocolate pieces: so get 1 cup measuring cup, fill to 3/4 cup w water, THEN put in enough pieces to to 1 cup mark. Drain the water- n there u go – 1/4 cup chocolate pieces!!!

  5. It’s so much better if you present recipes using weight, preferably grams. A gram of something is a gram no matter whether it is in one piece or many broken up pieces. Whereas cup of something is difficult to measure accurately. A cup of dark chocolate could be any amount depending on how big the pieces are.

  6. What are the net carbs for 1 truffle? If I’m understanding how to calculate it correctly there is 6 net carbs for only 1 truffle? Thank You!

      1. Don’t you subtract out the carbs for the stevia? I was instructed to. Along with grams of carbs for erythritol.

  7. Is there a recipe for a ginger snap that uses fresh grated ginger that is close to the famous Trader Joe’s Ginger Snaps in taste?

  8. Made these today: delicious
    Couple of things I learnt, i will not use 99% unsweetened chocolate. Its bitter and had to use both stevia and a pinch of Himalayan pink salt to balance the taste. Also, I substituted vanilla for almond extract. Did not find cacao used organic cocoa. All in all it will be a great snack with bullet proof coffee. Blessing Dr. Jocker

  9. you can also use instead of the chocolate cocoa powder mixed into melted cocoa butter and blended dates as a sweetener.

  10. The recipe calls for *unsweetened* chocolate but the link takes you to a 74% cacao chocolate. I can’t imagine this coming out right with unsweetened chocolate with only 10-15 drops of stevia. In my experience trying to sweeten unsweetened chocolate with stevia doesn’t work well, too much bitterness comes with the amount needed for sweetening. Are the nutrition facts based on using 74% chocolate or unsweetened chocolate?

    1. You really don’t need a lot of flavor with this as the chocolate is naturally sweet when it combines with healthy fats. But sweeten with stevia up to your desired flavor profile.

  12. As a retired Advanced Practice Nurse, I find it appalling that you would have the individual demonstrating the making of the avocado-Chocolate truffles, wearing so many rings on both her hands! That is grossly unsanitary & unsafe, especially in this time of COVID-19!! At the least, she should be wearing gloves! Please take this into consideration! Many thanks.
    On another note, the truffles do look yummy!

    1. I’ve noticed the same thing in a lot of videos. Rings not ok, but I’d rather have clean hands any day instead of plastic gloves/phthalates/BPA, etc on my snacks!

  13. Really… “appalling”? Wow! She’s wearing 3 tiny rings. My kids ate dirt growing up… as did I, growing up in the country, and we all have great, God-given immune systems. C-19 is 99.98% survivable and the video was filmed before December 14, 2016. But hey, to each his own, right?
